A really filling, delicious and easy soup they even I couldn’t mess up 🙂
Serves 2
2 carrots peeled and chopped (50)
1 garlic clove (4)
1 onion (60)
1 cup vegetable stock (5)
1 tsp curry powder (7)
½ cup almond milk (15)
Heat a splash of vegetable broth in a non-stick pot and add the onion. Replace the lid and allow to cook for 3 minutes
Add the chopped carrot and mix to make sure nothing is stuck to the bottom of the pot. Replace lid and cook for 5 minutes.
Pour in the rest of the broth and add the curry powder plus salt and pepper to taste. Cook until the carrot is soft
Take off the heat and blend until smooth
Reheat the soup and add the almond milk
Enjoy!
Notes: This is nice on its own or with a rice cake (30) or half a sweet potato wrap (42). I also top mine with nutritional yeast which has like 2 calories but tastes like cheese.
